For my reference.


1 box spiral macaroni

3T butter
2.5T flour

Make roux, cook til almond.

2.5 C Milk (+more if needed)

Whisk into roux til smooth. Not too thick

6oz Cheese (colbyjack or cheddar, sharp is good)
8oz velveeta

cut into thin slices so it will melt easier. Whisk into sauce until fully melted

1T Mustard
Salt Pepper

Spice it up

2 dollops sour cream

stir in til smooth

Add boiled noodles to sauce, stir to coat. Put in casserole

3T Butter
1C Panko

Melt butter in skillet, add panko, toast.
Top mac with it

Bake for 20 minutes at 325

Eat

There should be an excess of sauce but not too much. You don't want the noodles swimming but they need to be fully coated.
